What is the best meat to make Nihari?
Nihari requires large meat pieces. Beef, lamb, chicken, or mutton goes well for it. If you have planned to cook Nihari, ask the butcher to cut it into large pieces.
What is the recipe for Nihari?
Heat oil or ghee in a large pan. Put sliced onions and cook till they caramelize. Add ginger-garlic paste, turmeric powder, chili powder, and coriander powder. After the masala sautéing, add the meat (big chunks depending upon the number of people). Let the meat fry for 5-10 mins. Add Nihari masala powder prepared by you. Pour a sufficient amount of water and stir well. Cook slowly for 4-5 hours or pressure cook for 40-50 minutes till the meat is tender. You will find grayish color rising. Nihari is ready to be served.
How to thicken Nihari?
You can use wheat flour to thicken the gravy. You can try rice flour, chickpea flour, and cornstarch. Make sure you roast them before you use them. Keep the ratio as 3:1, three parts of rice flour or chickpea flour to 1 of corn starch.
How to plate Nihari?
Plating Nihari is an art. You will need to arrange the table accordingly. You may serve Nihari with naan, roti, or Khameeri roti. Khameeri roti will be apt. You can keep the large pieces of meat from the gravy in the middle of the plate while serving and pour the gravy around the meat. Garnish it with julienne ginger. Add salads of onions, beetroot, carrot, cucumber, and lemon.
